Kohlrabi pad Thai style

Kohlrabi Pad Thai  style
Ingredients:
  • 1 (10 ounces) bag Mann’s Kohlrabi “Linguine”
  • 1 tablespoon sesame oil
  • 4 mini red peppers, cut into ¼” lengthwise slices
  • 1 garlic clove, minced
  • 1 bunch of scallion ( green onion ) sliced thinly
  • 1/3 cup of cilantro, chopped
  •             1/3 cup of parsley, chopped
  • 1/3 cup  peanuts, roasted, chopped
  • lime wedges, for garnish
  • 2 tablespoons mint, chopped for garnish
For the Pad Thai Sauce :
  • 1/3 cup liquid amino
  • ¼ cup water
  • ¼ cup fish sauce
  •             1-2 lemons ( juice only )
  • 1 tablespoon vinegar
  •       2 tbs honey or fiber syrup
  • red chili flakes or fresh chili pepper chopped to taste
  • salt, to taste
For Pad Thai Sauce
To make the sauce, honey, water, fish sauce, liquid aminos, lemon in a mason jar or salad dressing shaker saucepan over medium-low heat, whisk to combine, add chili flakes or fresh spicy pepper and mix well until blend perfectly, taste and adjust, If you wish to add more honey, lemon, salt, water etc
Once ready Set aside.
For Kohlrabi linguine:
Add oil to a skillet over medium heat. Sauté peppers until slightly soft, 3-4 minutes. Add garlic and scook until garlic is fragrant, about 4 minutes.
Steam the Kohlrabi “Linguine” Noodles in the microwave according to bag instructions. Set aside.
Add the green onions, cilantro, parsley to the skillet, reduce heat to low, and stir for about 1 minute. Add Kohlrabi “Linguine” Noodles and sauce and toss to combine. Remove from heat, add mint and peanuts, and garnish with a lime wedge before serving.
