Sprinkle salt & pepper and mix well drizzle on top
Note - if your not dairy free you can top it up with labane or goat cheese yogurt
preheat oven to 375f
Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in. shells. Place your zucchini boats on parchment paper, spray them with oil and place in the oven 15 -20 minutes or until tender.
Chop : zucchini pulp, parsley, scallions and spicy pepper
Put some avocado oil (or your favorite) in a skillet and heat to medium/high Add cauliflower rice, zucchini pulp, scallions, parsley and spicy pepper stir and cookfor 15 min. Spice with salt and pepper, mix well and spoon into the zucchini shells.
Bake, uncovered, at 350° for additional 10 minutes
