Every Sunday I love prepping my tahini dressing for the week ! And very often it’s gone by Wednesday! So I’ll dedicate 15-20 minutes to make sure I have so more for the rest of my week .
Homemade dressing is a key to success
I use it as a dip, spread, salad dressing etc ...
LET’S START WITH MY CLASSIC HOME MADE TAHINI :
WHAT U NEED :
1LB TAHINI RAW SESAME PASTE ( I USE THE 365 FROM WF )
2 SQUEEZE LEMONS
1.1/2CUP OF ICE WATER
SPICES: CUMIN, SALT, WHITE PEPPER
FOR PERFECT CREAMY TEXTURE COMBINE EVERYTHING IN A FOOD PROCESSOR AND BLEND WELL *ADD WATER/ LEMON IF NEEDED UNTIL YOU GET THE PERFECT CONSISTENCY, IF YOU DON’T WANT TO USE FOOD PROCESSOR, YOU CAN DO IT IN A MIXING BOWL AND WHISK IT WELL, IT’S A GREAT ARM WORKOUT😂👌🏻😉
NOW IT’S TIME TO ADD CURRY POWDER😋👌🏻
My advice is to keep half of the tahini dressing
Classic and half with curry ...
that way you have 2 different dressing for the week ready for you !
So let’s add
3TBS CURRY POWDER, MIX IT WELL AND TASTE TO ADJUST YOU MIGHT NEED MORE LEMON/ WATER/ CURRY
NOTE : USE ICE WATER (WITHOUT THE ICE ) ! IT MAKES DIFFERENCE
I sliced some fresh radishes and cucumber and made tahini curry sandwich, we had a pool party and it was a big hit ! Enjoy😊
Homemade Spicy paste / spread:
Spicy green sauce:
2 garlic cloves
2 -5 coarsely chopped medium chili or any fresh spicy pepper you love ( jalapeño etc )
1 cup packed flat-leaf parsley
1 cup packed cilantro sprigs
1/2 cup extra-virgin olive oil
5 tablespoon lemon juice
1/2 teaspoon ground cumin
About 1tsp of Pink salt
In a food processor, whirl garlic and jalapeño until minced.
Add parsley, cilantro, 1/2 cup water, the extra-virgin olive oil, lemon juice, cumin, kosher salt, and ground cardamom. Pulse until coarsely puréed. Add more salt to taste.
if you are a spicy lover you can add more chilies or jalapeño
Chili& Jalapeños are hit or miss, smell of taste before to make sure it’s spicy🌶
You can do the same recipe with different spicy peppers as well👍🏻
