1 cup cooked garbanzo beans* (if you use beans from can strain and rinse 3 times)
1/2 cup almond / coconut milk
1/3 cup shaved almonds
1tbs of pb2 ( peanut butter powder) or any pb you have at home .
3tsp coconut yogurt
5 Tbsp maple syrup ( or honey , if u like your cookies sweet u can add more ) .
½ tsp vanilla extract
1/2 Tbsp baking powder
4 Tbsp unsweetened baking cocoa
In a blender or in a food processor, combine all the ingredients .
Puree until the mixture is smooth, about 30-60 seconds. You can actually taste and add more maple syrup if needed
Place On parchment paper with spoon
Preheated oven 375f 25-35 minuets
I love adding dark chocolate chips & unsweetened coconut chips on top 😌 I found out that I finished my chocolate chip last night so I added more shaved almonds on top and sunflower seeds, it came out delicious!!! ( add toppings b4 baking) .
