Double Chocolate Hummus Cookies

Gluten free & vegan šŸŒ±Ā 

INGREDIENTS:Ā 

  • 1 cup cooked garbanzo beans*Ā (if you use beans from canĀ strain and rinse 3 times)
  • 1/2 cup almond / coconut milkĀ 
  • 1/3 cup shaved almondsĀ 
  • 1tbs of pb2 ( peanut butter powder) or any pb you have at home .Ā 
  • 3tsp coconut yogurtĀ 
  • 5 Tbsp maple syrup ( or honey , if u like your cookies sweet u can add more ) .Ā 
  • Ā½ tsp vanilla extract
  • 1/2 Tbsp baking powderĀ 
  • 4 Tbsp unsweetened baking cocoa

INSTRUCTIONS

  1. In a blender or in a food processor, combine all the ingredients .Ā 
  2. Puree until the mixture is smooth, about 30-60 seconds. You can actually taste and add more maple syrup if neededĀ 
  3. Place On parchment paper with spoonĀ 
  4. Preheated oven 375f 25-35 minuetsĀ 
  5. I love adding dark chocolate chips & unsweetened coconut chips on top šŸ˜Œ I found out that I finished my chocolate chip last night so I added more shaved almonds on top and sunflower seeds, it came out delicious!!! ( add toppings b4 baking) .Ā 
  6. Try to make ice cream sandwich with the cookies šŸŖ my favorite is coconut ice cream with cashews butter on top , enjoy šŸ˜‰
